Last week my mom came up for a visit and to watch Bennett when I went to work one day. She brought some of the most amazing pumpkin bread from a local Jacksonville, Florida bakery. It was such a hit with me, Brian and Bennett that I set out to recreate it the best I could. And after a good number of trial and error loaves, I have successfully nailed down my dream pumpkin bread recipe.

Baking is not my favorite pastime, but I have come to really find enjoyment in it in the fall. I love filling my house with the smell of fresh baked fall goodies. It adds a warmth to my home and really puts me and my family in the spirit of the season.

I haven't made too much bread in the past, but this recipe is extremely easy and perfect for the baking novice like myself. The hardest part is resisting eating the whole loaf in one sitting. This pumpkin bread is absolutely amazing, and I hope you add it to your fall baking list!

Cinnamon Sugar Spiced Pumpkin Bread  (recipe makes one loaf)

Ingredients-

Bread:

1 3/4 cup all-purpose flour (plus a little extra to dust the pan)
1/2 tsp salt
1/2 tsp baking powder
1 tsp baking soda
1 tsp ground cloves
1 tsp ground cinnamon
1 tsp ground nutmeg 
1 3/4 cup sugar
1/4 cup maple syrup
1 stick (8 tbsp) softened unsalted butter (plus a little extra to grease the pan)
2 large eggs
15 oz can pumpkin purée 

Cinnamon-Sugar Topping:

3 Tbsp sugar
1 Tbsp cinnamon

Instructions-

1. Preheat oven to 350 degrees
2. Rub some butter in loaf pan then dust with all-purpose flour
3. Whisk flour, salt, baking powder, baking soda, cloves, cinnamon and nutmeg in large bowl until well combined
3. Beat softened butter, sugar and maple syrup with stand or hand mixer until blended. Add eggs one at a time. Continue beating mixture until light and fluffy.
4. Add pumpkin puree and beat until well combined
5. Reduce speed to low and slowly add mixture of dry ingredients
6. Once mixture is well combined pour into prepared loaf pan 
7. Whisk sugar and cinnamon for topping then sprinkle over batter
8. Bake 55 - 60 minutes or until toothpick comes out clean
9. Allow to cool in pan at least 5 minutes then transfer to cooling rack (you may need to run a butter knife along edge of bread to loosen the loaf)
