Lillet Rosé Sparkler

I wanted to share this cocktail with you in time for Mother's Day since this sparkling libation would make such a beautiful addition to a Mother's Day Brunch. Because all those mama's out there are worth something more special than just a traditional mimosa (am I right?). This cocktail is sweet, citrusy and sparkly, or basically everything that describes amazing boozy brunch drink. What makes it really great is its shining star, Lillet. 

Although I only recently discovered Lillet Rosé, at one sip it had me wondering where it has been all my life. Lillet is a French aperitif wine from a small village south of Bordeaux. It is blended as a Blanc, Rosé and Merlot. If you love Rosé as much as I do then you should totally try this fortified wine blend! It is fruity, florally and absolutely delicious. I love sipping it on its own on the rocks with an orange peel, but it can also help you create a fabulous cocktail. 

This Lillet Rosé Sparkler is delicious, super easy to make and will certainly impress your guests! I garnished with edible flowers, but a grapefruit slice or rind would do just fine!

 Lillet Rosé Sparkler   (recipe makes 1 cocktail)


Simple Syrup-

1/2 cup water
1/2 cup granulated sugar


1 Tbsp simple syrup
2 oz Lillet Rosé
2 oz Ruby Red Grapefruit juice (I prefer fresh squeezed)
Chilled Champagne 


1. To make simple syrup, stir sugar and water in small saucepan over medium heat until sugar is dissolved. Turn off heat then allow to cool to room temperature before using. Simple syrup can be stored in airtight container in refrigerator up to 1 month.

2. To prepare cocktail, add simple syrup Lillet Rosé and grapefruit juice to coupe Champagne glass and stir. Top with chilled Champagne and garnish with edible flowers, grapefruit slice or grapefruit rind. Enjoy!
