Sweet Chili Salmon


Hi Guys and Happy Happy Friday! I wanted to share this Sweet Chili Salmon recipe because it's one of the easiest ways I prepare salmon but also one of the tastiest! I try to make a cold water fish entrée for my family at least once a week although I hope to increase that sometime soon. If you were able to catch this post, I discussed the benefits of cold water fish for the eyes. But cold water fish, which is rich in omega-3 fatty acids,  has whole body health benefits! Although getting your omega-3s is important, you should also be careful and avoid eating fish high in mercury, especially when you're feeding small children or if you're pregnant or breastfeeding. 

When preparing this dish, you should let the salmon marinate for at least an hour to really allow a bunch of flavor, but this recipe only calls for about 12 minutes of actual cooking time! It's deliciousness and simplicity keeps this dish on repeat in my kitchen. Enjoy it over some quinoa or coconut cauliflower rice!


Ingredients:

6 oz salmon fillets
Kosher salt
Thai sweet chili sauce (I use the Blue Dragon brand)
Green onions (chopped)

Instructions:

1. Place salmon fillets in a baking dish. Add a pinch of salt to each fillet.

2. Add 1 1/2 Tbsp sweet chili sauce to each fillet. Rub or brush the sauce all over the top and sides of fillets. Cover and let marinate for at least 1 hour (and up to 24 hours).

3. When ready to cook make sure top oven rack is 6" from heat and turn broiler on High. Cover baking sheet with parchment paper and spray with coconut oil spray. Place fillets on prepared baking sheet and brush each with 1/2 Tbsp more sweet chili sauce. Broil for 7 minutes rotating the baking sheet halfway through. Remove from oven, brush each fillet with 1/2 Tbsp more sweet chili sauce and broil for another 5 minutes (make sure to check periodically after 4 minutes to ensure salmon isn't burning).

4. Top fillets with chopped green onions.

5. Serve over quinoa or cauliflower rice (as shown).
