With Easter only a few short weeks away, I started thinking about ideas for a fun Easter dessert. Although I haven't planned my full Easter Sunday meal, I do know that this year I will be serving these adorable apple butterscotch galettes. I added sliced fried apples to the top to make them look like little nests and placed candy eggs in the center of each one. And these darling little desserts are gluten and dairy-free.

This was actually my first time making galettes and, although the end result left room for improvement, they still looked adorable and tasted delicious. I used a gluten-free pie dough mix to make the dough and substituted margarine in place of butter to keep the dessert dairy-free.

The galette's filling consists of a delicious tart and sweet apple mixture as well as a butterscotch sauce made with margarine, brown sugar, sea salt and dairy-free vanilla creamer.

Ok.. So it's obvious from these images that I am no pâtissière but these desserts are so delicious and the taste testing was such a hit with my family that I'm sure I will experiment with making other types of galettes after Easter and hopefully I will eventually learn how to master some pie dough.

I topped these galettes with thinly sliced "apple fries" to make them look like a little nest. I fried the apple slices in a little bit of vegetable oil then sprinkled them with cinnamon and sugar. The topping really set this dessert over the top with extra appley goodness and an extra burst of sweetness from the cinnamon-sugar mixture.

Easter Apple Butterscotch Galette Nests (Gluten & Dairy-Free)  (recipe makes 4 mini galettes) 

Ingredients:

Butterscotch Sauce:

1/4 cup margarine
3/4 cup packed light brown sugar
3/4 cup dairy-free vanilla creamer
1/4 tsp sea salt

Crust:

1 box King Arthur Flour Gluten Free Pie Crust Mix
2 sticks cold margarine 
5 Tbsp cold water

Apple Filling:

3 Granny Smith apples (peeled, cored and sliced into 1/8" slices)
1/4 cup granulated sugar
1 Tbsp gluten-free flour
1 Tbsp fresh lemon juice

Toppings:

Vegetable oil
2 Granny Smith apples (peeled, cored and sliced into thin "french fry-like" slices)
1/4 cup cornstarch
1/4 cup granulated sugar
1/8 cup cinnamon
Chocolate candy Easter eggs

Instructions:

Make Butterscotch Sauce:

1. Melt margarine in medium sized saucepan over medium heat
2. Whisk in brown sugar, vanilla creamer and sea salt then allow the mixture to bubble for 5 minutes without stirring
3. Remove from heat and allow to cool to room temperature

Make Apple Filling:

4. Combine apples, sugar, lemon juice and gluten-free flour in a medium sized bowl

Prepare Galettes:

5. Preheat oven to 400 degrees and line 2 baking sheets with parchment paper
6. Prepare gluten-free pie crust dough according to package instructions substituting margarine for butter
7. Divide dough into 4 equal parts and shape into discs. Wrap each in plastic wrap and place in refrigerator for at least 15 minutes
8. Roll first dough portion out into 8 inch circle on a well-floured surface
9. Place 2 layers of apples from filling mixture in center
10. Fold dough up and slightly over outer apples, transfer to prepared baking sheet, then pour 3-4 Tbsp butterscotch sauce around the apples in the center. Then repeat steps 8-10 with 3 remaining dough portions
11. Bake 25 minutes then lower oven temperature and bake an additional 5 minutes or until crust is slightly golden brown

Make Apple Fry Topping

12. Heat 1 inch of vegetable oil in deep frying pot over medium-high heat
13. Mix apple slices and cornstarch in medium sized bowl until well combined
14. Combine sugar and cinnamon in small bowl and set aside
15. Fry apples in small batches for approximately 3 minutes or until apples start to turn golden brown. Remove with slotted spoon and place on paper towels to drain. Continue with remaining apple slices
16. Sprinkle apple fries with cinnamon and sugar and keep nearby

Put it all together

17. Top each baked galette with apple fries then top apple fries with mini candy eggs. Enjoy!
