Valentine's Day Chocolate Dipped Strawberries

Valentine's Day is the perfect excuse to indulge in some sweets. And for me, when it comes to tasty treats, it doesn't get much better than Chocolate Covered Strawberries.

Although strawberries covered with dark chocolate are my absolute favorite, making some covered in white chocolate or pink chocolate (white chocolate with the teensiest bit of food coloring) adds some fun festiveness for Valentine's Day.

These are super easy to make as it only takes a few minutes to melt the chocolate. You have to add a little fat to the chocolate in order for it to melt smoothly, so I like to add vegetable oil.

So, although mine turned out a little messy, I still think these look adorable on a serving dish. Making and decorating chocolate covered strawberries would be such a fun project to do with young kids. You can let them decorate the strawberries with sprinkles, crystals, baking pearls or more melted chocolate.

So if you decide to make some chocolate covered strawberries, I know you'll have fun doing it! It makes the perfect simple dessert for a date night in or a fun dessert for kids. Bennett absolutely loves them!


Chocolate Dipped Strawberries   (makes approximately 30 strawberries)

Ingredients:

1 1/2 lbs strawberries
1 tsp vegetable oil
1/2 cup dark chocolate chips & 1/2 cup white chocolate chips (of course you can make all dark chocolate or all white chocolate if that makes you happier :)  )
Sprinkle, crystals or pearls for decorating

Instructions:

Add chocolate chips and oil to saucepan and heat on low, stirring constantly until completely melted and smooth (if you want to make pink chocolate add 1 drop of food coloring to melted white chocolate). Remove from heat. Dip strawberries into melted chocolate allowing excess to drip then place on baking sheet covered in parchment paper. Add decorative garnishes and refrigerate for at least 30 minutes before serving. Store covered. (If you want to add more melted white chocolate for decor, add after refrigeration once base chocolate has hardened.)
