Cocktail Hour- Southside Cocktail

The 4th of July Weekend is finally here!!  We're leaving for a (long overdue) week long vacation with my family, and I couldn't be more excited.  I grew up spending holidays with my large extended family, and I'm so thrilled to have Bennett share the same experiences!  But I couldn't leave without sharing a cocktail recipe for your July 4th Weekend!  

A Southside is basically a gin mojito, but I thought it would be fun to add a touch of Americana and color with some fresh strawberry ice cubes.

It was awesome to be able to enjoy the strawberries at the end of my drink once the ice had melted!

I'm obsessed with this drink because I prefer gin to rum, and I love the minty sweetness of a mojito.  I'm also a huge fan of the color of this drink.  It is somewhere between a clear and white cocktail and looks luxurious. And when the strawberry juice starts to run in it becomes the most subtle shade of pink.

Southside cocktails are gorgeous, refreshing and perfect for your summer vacation!  I also happen to think the strawberry ice cubes add such a pretty touch :)  You can also add a little mint for garnish.

Southside with Strawberry Ice Cubes (Recipe makes 1 cocktail)


Strawberry Ice Cubes:

Jumbo Ice Cube Tray (They're amazing for whiskey, scotch and cocktails because there's limited dilution.  I have this one)
Strawberries halved

Simple Syrup (may be stored in fridge in air tight container up to 1 month):

1/2 cup Water
1/2 cup Granulated Sugar


Gin (I prefer Hendrick's or Cardinal)
Fresh Lime Juice
Fresh Mint Sprigs
Simple Syrup


1.  Add 3-4 strawberry halves to each section of your jumbo ice tray and fill with filtered water.  Freeze (I recommend overnight).

2.  To make your simple syrup, stir 1/2 cup sugar in 1/2 cup water over medium heat until sugar is dissolved.  Allow to cool to room temperature.

3.  Fill shaker with normal (non-strawberry) ice and add 4 parts gin, 2 parts lime juice and 1 part simple syrup.  Add about 7 mint sprigs after rolling them around in your palms a bit to begin to release the oils.  Shake for 25-30 seconds.

4.  Strain into glass filled with your strawberry jumbo ice.

5.  Sit back and enjoy!
