Cocktail Hour- Cucumber Ginger Martini

This might be the freshest tasting cocktail I have ever had!  I am absolutely in love with it!  The fresh summery taste of the cucumber with the subtle spice of the ginger with the sparkly effervescence of the ginger beer combines to make summer drink perfection...

Recipe yields 2 cocktails


Ginger Simple Syrup:

1/2 cup water
1/2 cup granulated sugar
2 inch chunk fresh ginger peeled and halved


5 oz vodka (I used Tito's)
8 1" chunks cucumber (peeled and deseeded)
Juice of 1 lemon
1 oz ginger simple syrup
Ginger beer (My ginger beer of choice lately is Q-Drinks Ginger Beer)


Ginger Simple Syrup:

1.  Heat sugar and water in small saucepan on medium heat stirring until sugar dissolves and mixture is simmering.

2.  Add ginger, bring back to simmer, then remove from heat and allow to cool to room temperature

3.  Strain before using.  Simple syrup can be stored in refrigerator in airtight container up to 1 month


1.  Muddle cucumber with lemon juice in cocktail shaker.

2.  Add vodka and ginger simple syrup then shake.

3.  Pour into chilled martini glasses, top with ginger beer and garnish with cucumber slice.
