Cocktail Hour- Jalapeño and Peach Mojito

Hi Friends!!  In honor of Cinco de Mayo, I wanted to post a cocktail recipe a little earlier in the week in case you were on the hunt for an amazing cocktail to help you celebrate!..
I tested this recipe on my husband, who not only considers himself a Latin cuisine connoisseur but finds it hard to sit down and enjoy a cocktail when he knows there's an IPA in the fridge.  Well guys, he had dos mojitos.

I really love this recipe because the jalapeño cuts through the sweetness of the sugar and peaches.  It has just the right background note of heat but is far from overpowering.  Everyone has done the Cinco de Mayo margarita; so change it up and enjoy this deelish mojito!


Jalapeño Simple Syrup:

1/2 cup water
1/2 cup sugar
1/2 jalapeño, seeded


3 peaches, peeled and sliced 
(I actually used 1 jar of Dole Peaches since I was a week early on peach season)
Jalapeño simple syrup
Zest of 1 lime
Juice of 4 limes
1/2 cup mint leaves
2 cups white rum
3 cups club soda, chilled
Additional mint leaves for garnish


1.  To make simple syrup, mix water and sugar in small saucepan over medium-high heat until sugar dissolves.  Remove from heat and add jalapeño.  Allow to sit for at least 1 hour.  Refrigerate until ready to use.

2.  Purée peaches until smooth and push through fine mesh strainer into small bowl.  

3.  Add lime zest, lime juice, mint leaves and jalapeño simple syrup to pitcher.  

4.  Muddle mint mixture on side of pitcher using back of long spoon.

5.  Add peach purée, rum and club soda to pitcher. Stir. 

6.  Pour into glass over crushed ice.  Garnish with mint leaf.  Sip and enjoy!
