Cocktail Hour- Grapefruit & Vanilla Gin Martini


Hey Guys and Happy Friday!  Here's another Friday cocktail recipe for you!

This one is inspired by a drink I had at brunch at Aquitaine in Chestnut Hill while out celebrating Mother's Day.  I knew as soon as I sipped it that I would have to try to recreate it at home and I think I kind of nailed it.  If you're in the Boston area, you have to try Aquitaine for brunch!  The food and cocktails are fantastic and it has such a beautiful ambience.  The restaurant is part of the Aquitaine Restaurant Group, the same company behind my South End Favorites: Cinquecento and Gaslight Brasserie du Coin.

Grapefruit & Vanilla Gin Martini (Recipe makes 2 cocktails)

Ingredients

Vanilla Simple Syrup:
1 cup water
1 cup granulated sugar
1 1/2 tsp vanilla extract

Cocktail:
Juice of 1 grapefruit
2 shots gin (I prefer Hendrick's)
6 tbsp vanilla simple syrup
Grapefruit peel (for garnish)

Instructions

1.  To make simple syrup, heat water and sugar on medium-high heat stirring until sugar is dissolved and mixture is simmering.  Allow to cool completely then add vanilla extract.  (*Leftover simple syrup can be stored in air-tight container in refrigerator for up to 1 month)
2.  Add gin, grapefruit juice and vanilla simple syrup to shaker with ice.
3.  Shake well then strain into 2 chilled glasses.  
4.  Garnish with grapefruit peel.  (*You can rub the peel along the rim of the glass to release aromatics and make it extra special)
