Cocktail Hour- Grapefruit and Sage Prosecco Cocktail

Happy Friday Everyone!!  I thought it would be a fun idea to do a cocktail recipe post on Fridays to inspire your Happy Hour..

I absolutely love grapefruit! Whenever I see a libation with grapefruit on a drink list it is always hard to resist.  This fizzy glass of grapefruit and sage amazingness I'm sharing with you is beyond good.  The complement of the sage to the grapefruit gives the drink an herbaceous freshness that is perfect for springtime.  Cheers!

Sage Simple Syrup:

1 cup water
1 cup sugar
2-3 bunches of fresh sage

Fresh grapefruit juice
Sage simple syrup
Angostura bitters
Fresh sage leaves (for garnish)

1.  To make the simple syrup, combine sugar and water over medium-high heat stirring until sugar dissolves.
2.  Add sage and give it a stir and simmer for 30 more seconds.
3.  Remove saucepan from heat and allow simple syrup to cool to room temperature.
4.  Once cooled, remove and throw away the sage.
5.  Put syrup in sealable container as it can be stored in the fridge for future use.
6.  For a single cocktail add 6 tbsp fresh grapefruit juice, 3 tbsp sage simple syrup and 2 dashes of bitters to shaker with ice.
7.  Give it a bartender shake and strain into glass.
8.  Top the glass with prosecco
9.  Garnish with fresh sage leaves and enjoy.

I would love to know what you guys think about this recipe or of the idea of Friday cocktail recipe posts in general!
